Moo shu tortillas with rotisserie chicken

Serves 4

A mash-up of Mexican and Chinese flavors, this dish is a variation on traditional moo shu pancakes. Substitute flour tortillas for the pancakes and use a supermarket rotisserie chicken in place of pork.

1 cooked rotisserie chicken (about 3½ pounds)
12 flour tortillas (6-inch rounds)
½ cup hoisin sauce
½ cup chopped fresh cilantro
8 scallions, chopped
3 limes, cut into wedges

1. Set the oven at 350 degrees.

2. Remove the meat from the chicken, discard the skin, and cut the meat into 1-inch pieces.

3. Wrap the tortillas in 2 foil packages and place in the oven for 15 minutes.

4. On each tortilla, spread a thin layer of hoisin sauce. Add a small mound of chicken, and sprinkle with cilantro and scallions. Squeeze lime juice onto the mixture, then fold the tortillas around the filling.
