Homemade baked tortilla chips.

Serves 6

Many Mexican restaurants have a reputation for better-tasting tortilla chips thanks to two main details: the chips are always homemade and always served hot. You can replicate this in your own home with high-quality corn tortillas and a hot oven.

12 top-quality soft corn tortillas (6 inches)
1 tablespoon vegetable oil
Fine sea salt, to taste

1. Set the oven at 350 degrees. Have on hand 2 rimmed baking sheets.

2. Brush both sides of each tortilla with a bit of oil. Arrange tortillas into a neat stack and cut into sixths.

3. On the baking sheets, spread the tortilla pieces in a single layer and sprinkle with salt. Bake for 15 to 18 minutes, rotating the sheets halfway through, or until the chips are golden and crisp.
