To get started, mix your mashed potatoes with chives, egg whites, and breadcrumbs in a large bowl. On a separate plate, combine more breadcrumbs and cheese. Then, divide the potato mixture into eight equal parts and dip them in the breadcrumb mixture, shaping each into a ¼-inch patty. Next, heat a tablespoon of oil in a large nonstick pan. Plop four patties on the heated pan, and cook for 3 to 4 minutes on each side, or until they become golden brown. Then repeat for the next four patties.
