MAKES: 12 muffins

  • 3 large, ripe bananas
  • 4 large eggs
  • 2/3 c. peanut butter
  • 1/4 c. honey
  • 3/4 tsp. baking powder
  • 1/2 tsp. vanilla extract
  • 1/3 c. chocolate chips
  1. Preheat the oven to 400°F. Line a muffin tin with paper liners. 
  2.  Blend bananas, eggs, peanut butter, honey, baking powder, and vanilla extract in a blender until smooth. 
  3. Divide among muffin cups, sprinkle with chocolate chips, and bake 16 to 18 minutes until  puffed and lightly browned.
