Chicken Pot Pie Soup

All savory classic chicken pot pie soup– the chicken, celery, carrots, peas, cream sauce – is shown in this easy to make soup. A great cold weather dish for lunch or dinner with your family,which is a good healthy recipe .

Heat oil in large saucepan over high heat. Add vegetables, thyme, salt and pepper. Cook and stir until vegetables begin to soften, about 5 minutes. Add cooked chicken. Add flour and stir to coat. Cook 1 minute, stirring constantly. Add chicken stock and stir, picking up any cooked bits from bottom of pan. Bring to a boil. Reduce to simmer, cover and cook about 10 – 15 minutes, or until vegetables are soft. Add frozen peas and evaporated milk and stir until heated through.
Chicken Pot Pie Soup

Sweat vegetables with butter in a soup pot over medium heat until softened, about 5 minutes.  Whisk in flour and cook for another 2-3 minutes.  Stir in broth, wine, poultry seasoning, white pepper, salt and nutmeg. Increase heat to medium-high and simmer until thickened, about 10 minutes or less.
